Ingredients of Chive and Cheese Bread
120g high-gluten flour
30g low-gluten flour
20g white sugar
2g yeast powder
6g milk powder
15g whole egg liquid
15g butter
80g water
1g salt
Making Steps of Chive and Cheese Bread
Step 1: Put all the ingredients into a mixing bowl and stir them into flocs with chopsticks.
Step 2: Knead the dough using the post-butter method.
Step 3: Knead until it reaches the expansion stage.
Step 4: Cover with plastic wrap and let it ferment at room temperature until it doubles in size.
Step 5: Take out the fermented dough, knead it on the chopping board to release the air, divide it into 8 portions, cover with plastic wrap and let it rest for 15 minutes.
Step 6: Roll it out.
Step 7: Turn it over and roll it up.
Step 8: Do the same for each portion. I made the last three into three-strand braids.
Step 9: Put it into the oven, place a bowl of hot water at the bottom, close the oven door and let it rise for the second time.
Step 10: Cut the mozzarella cheese into small pieces and cut the chives into small sections for later use.
Step 11: Take out the risen bread dough, brush a layer of egg liquid, and lay cheese slices on top (you can skip this if you don’t have any).
Step 12: Sprinkle with cheese pieces and chives.
Step 13: Put it into the preheated oven, in the middle layer, with top and bottom heat, at 180 degrees Celsius for about 15 minutes (the time and temperature are for reference only).
Step 14: Take it out of the oven and let it cool before eating.
