Ingredients for Toast Bread + Coconut Bread
520 g high-gluten flour
80 g caster sugar
60 g milk powder
6 g dry yeast
75 g condensed milk
4 eggs
200 g milk
60 g corn oil
80 g coconut filling (80 g coconut, 1 egg, 20 g corn oil, 40 g sugar)
1 egg for brushing the surface
Steps to Make Toast Bread + Coconut Bread
Step 1: Put all ingredients except the coconut filling together and knead for about 30 minutes.
Step 2: After fermentation, divide the dough into two parts.
Step 3: Divide one of the parts into 3 equal portions.
Step 4: Roll each portion into a circle, fold it twice to form 3 layers.
Step 5: Roll it up. Do the same for the other two portions and then let it rise again.
Step 6: In a bowl, add 1 egg, coconut, sugar and corn oil.
Step 7: Stir well. There’s no need to be very precise about the weights.
Step 8: Roll the other large dough into a circle and spread the coconut filling on it.
Step 9: Fold it in half towards the middle twice and then roll it out.
Step 10: Make two cuts, leaving a small part uncut on one side.
Step 11: Braid it and put it in a mold to rise.
Step 12: Let it rise again. Adjust the time according to the growth of the dough. Brush the egg liquid on the coconut bread before putting it into the oven.
Step 13: Bake in the oven at 170°C for 45 minutes. Cover the coconut bread with tin foil after about 20 minutes.
Step 14: Observe the color. Cover it with tin foil when the color is right.
Cooking Tips for Toast Bread + Coconut Bread
This is the amount for two breads. Halve all the ingredients if you only want to make one. There are not many requirements for the coconut filling. I didn’t weigh it precisely. The coconut filling with only egg yolks looks better. You can skip the condensed milk. If using butter, knead the dough first and then add the butter and continue kneading. Even if you never get the glove film, the result can still be good. Don’t be obsessive when kneading by hand.
