Ingredients for Mini Bread Tangzhong: High-gluten flour 20g, boiling water 20g. Main dough: High-gluten flour 260g, low-gluten flour 30g, honey 35g, egg 1, milk 150g, salt 3g, strawberry flavor fruit and vegetable powder 15g, milk powder 20g, butter 35g, dry yeast 3g. Filling for mini bread: cranberries to taste. Ice bread filling: whipped cream 75g, mango cubes to taste, peach cubes to taste.
Method for Mini Bread Step 1: Combine the tangzhong ingredients evenly, cover with plastic wrap and let cool (if time permits, refrigerate overnight for fermentation).
Place the main dough (excluding butter and yeast) and the cooled tangzhong into the bread machine (dough mixing mode), mix well, then add softened butter at room temperature. After the dough becomes smooth, add yeast and ferment for half an hour (fermentation mode). Step 2: Remove the dough, degas, and divide into nine small portions (approximately 60g each), relax for ten minutes. Step 3: Roll out with a rolling pin into a long oval shape. Step 4: Place chopped cranberries. Step 5: Fold both sides over. Step 6: Roll up from the top and bottom towards the center. Step 7: The shape should now look like this, see the image. Step 8: Place on a baking tray (I made six, the remaining three portions each wrapped a small piece of frozen butter, rolled round, to be used for ice bread later). Step 9: Place hot water below, I used the oven, fermentation mode for 40 minutes. Step 10: Preheat the oven to 160 degrees, make a slash on top, sprinkle with high-gluten flour. Bake at 160 degrees for about 18 minutes (watch closely in the last five minutes, cover with a sheet of parchment paper if it starts to brown too much). Step 11: The bread is ready, incredibly soft and full of milk flavor. Step 12: Whip the cream and mix in your favorite fruit cubes. Step 13: Place in a piping bag, poke a hole in the side of the freshly baked bread with a chopstick, twist to create some space inside. Step 14: Inject the prepared cream filling and freeze in the refrigerator for half an hour (you can also refrigerate directly).
