Matcha Cookie Recipe

Ingredients for Matcha Cookies:
Cake flour 150g, Butter 100g, Icing sugar 60g, Egg yolk 1, Matcha powder 3g, Black sesame seeds a pinch.



Method for making Matcha Cookies:


Step 1: Sift the cake flour and set aside.


Step 2: Soften the butter at room temperature, put it in a clean bowl, and add icing sugar.


Step 3: Whip with an electric mixer until creamy.


Step 4: Add the egg yolk.


Step 5: Continue to whip until well combined.


Step 6: Pour in the sifted cake flour.


Step 7: Knead into a dough with a total weight of 322 grams, and divide the dough evenly into two portions.


Step 8: Add matcha powder to one portion of the dough.


Step 9: Mix well to form a matcha dough.


Step 10: Divide the plain dough into two small portions of 20 grams each, and one larger portion of 121 grams. Use the small portions for the ears and the larger one for the face.


Step 11: Shape into a flat form, not too thin. Shape the larger dough into a flat form with a curved top, resembling an oval-shaped strip. As shown in the picture, place in the freezer until firm.


Step 12: Roll out the matcha dough into a sheet.


Step 13: Cut into squares.


Step 14: Take the remaining scraps and divide them into two small portions and one large portion. Shape them into flat strips and place in the freezer until firm.


Step 15: Now, it’s time to assemble. Place the larger matcha strip in the middle of the larger plain strip.


Step 16: Add the ears.


Step 17: Place two small matcha strips on either side of the ears.


Step 18: Wrap with matcha dough sheet, and place in the freezer for 30 minutes.


Step 19: After freezing until firm, take out and let it warm slightly, then slice.


Step 20: Arrange on a baking tray.


Step 21: Use black sesame seeds for the eyes and mouth. Use a chopstick dipped in water to place the seeds. Preheat the oven to 170 degrees and bake for 16 minutes, covering with aluminum foil after 8 minutes.


Step 22: After baking, let it cool and enjoy. The cookies are fragrant, crisp, and almost too pretty to eat.
