Ingredients and Making Steps of Matcha Chocolate Cookies

Ingredients for Matcha Chocolate Lover’s Cookies:
– 105g cake flour
– 115g butter
– 35g cornstarch
– 90g powdered sugar
– 35g whole egg liquid
– 20g fresh cream
– 5g matcha powder
– 2g salt

Ingredients for White Chocolate Lover’s Cookies:
– 115g cake flour
– 35g cornstarch
– 35g powdered sugar
– 115g butter
– 35g whole egg liquid
– 20g fresh cream
– 2g salt

Ingredients for Matcha Chocolate Filling:
– 4g matcha powder
– 70g white chocolate
– 15g butter

Ingredients for White Chocolate Filling:
– 80g white chocolate
– 20g butter

Making Steps of Matcha Chocolate Cookies:
Step 1: First, mix powdered sugar, whole egg liquid, and fresh cream evenly. Then add matcha powder and continue to stir until the matcha powder is completely integrated with the egg liquid.

Step 2: Then add cornstarch, cake flour, and salt and stir evenly.


Step 3: Heat the butter over low heat until it is completely melted.


Step 4: Pour it into the mixed dough and stir evenly. Wrap it with plastic wrap and refrigerate it for 30 minutes.


Step 5: Place a piece of baking paper under the tile mold.


Step 6: Use a spatula to spread the batter in each mold. Then cover it with another piece of baking paper. Use the spatula to level the batter on the baking paper and put it in the freezer for 1 – 2 minutes (since it’s summer, the batter is easy to soften when spreading).


Step 7: Then tear off the top layer of baking paper and remove the mold on the baking sheet.


Step 8: Preheat the oven to 170°C for the upper heat and 150°C for the lower heat. Place the baking sheet in the middle layer and bake for 7 – 8 minutes.


Step 9: Since I baked them crosswise, the color in the picture will change, but the production process is exactly the same, just with different flavors! Add the filling after the baked cookies have cooled completely.


Step 10: Melt the white chocolate in a water bath. Note that the fire temperature should not be too high! Add matcha powder and butter to the melted chocolate and stir evenly. This is for the matcha tile cookies. For the plain tile cookies, just add butter to the melted chocolate without matcha powder and stir evenly.


Step 11: Put the made chocolate fillings into piping bags respectively.


Step 12: Pipe the matcha chocolate filling between two matcha-flavored cookies to make matcha chocolate lover’s cookies.


Step 13: Pipe the white chocolate filling between two plain cookies.


Step 14: The made lover’s cookies look very nice. Now you can enjoy them!


Cooking Tips for Matcha Chocolate Cookies:
The oven temperature should be adjusted according to the actual temperature of your oven. If you use an oven with computerized temperature control, you can bake at 160°C for the upper heat and 140°C for the lower heat (for reference only).
After using a spatula to level the batter in the mold, be sure to cover it with baking paper and level it again on the baking paper to avoid uneven cookies after baking.
Freezing for 1 – 2 minutes is to facilitate demolding.
