Chocolate Cake Recipe with Detailed Steps

Ingredients for Chocolate Cake: Eggs 4, White Sugar 180g, Salt 2g, Rice Bran Oil (Corn Oil can also be used) 30g, Corn Starch 120g, Glutinous Rice Flour 30g, Cocoa Powder (Matcha Powder can also be used) 10g, Fresh Milk 30g, White Chocolate 40g, Dark Chocolate 40g, A touch of Pink Food Coloring.
Method for Making Chocolate Cake:


Step 1: Prepare a larger bowl with water at 40-60 degrees Celsius (slightly warm to the touch, not boiling). In a smaller bowl, place eggs, white sugar, and salt. Place the smaller bowl inside the larger bowl and use a whisk to gradually increase the speed to whip the mixture. Preheat the oven to 185 degrees Celsius at the same time.


Step 2: Once the mixture is uniform, remove the smaller bowl from the larger bowl (the water will be a bit cooler by now). Continue to whisk at high speed until the mixture has doubled in volume and flows with a viscosity of about 2cm.


Step 3: Sift the powdered mixture into the egg mixture to form a batter. Take 1/3 of the batter and mix it with the rice bran oil until uniform, then pour it back into the batter (always stir from the bottom, do not make circles). Finally, add 30g of fresh milk and mix well before placing it in the middle layer of the preheated oven for 35 minutes at 180 degrees Celsius (if unsure, use a toothpick to check; if it comes out sticky, it’s not ready yet. If the surface is too browned too soon, lower the temperature by 10 degrees and cover with foil).


Step 4: Prepare the pig’s facial features as shown in the picture, draw on parchment paper and freeze in the refrigerator, or wait to pipe directly onto the cake later (extra ears for backup, haha).


Step 5: Allow the cake to cool down, then whip the cream. I was watching the Spring Festival Gala replay and forgot to take a picture, but 400ml of cream with 40g of white sugar, placed in a bowl over ice water, should be whisked slowly to mix and then quickly until peaks form.


Step 6: Finally, pipe the cream using a small nozzle to create individual swirls and assemble the pig’s nose, eyes, and small ears. Congratulations, your chocolate cake is complete!
