Ingredients for Durian Mille Crepes: Low-gluten flour 100g, Anchor unsalted butter 15g, Pure milk 200ml, Sugar or powdered sugar (for the egg skin) 20g, Durian to taste, Nestle whipping cream 250ml, Sugar (for whipping cream) 25g, Egg 1, Egg yolk 1.
Method for Durian Mille Crepes: Step 1 Egg skin preparation: 1. Melt butter over hot water, 2. Mix one egg with one yolk and 20g sugar until well combined, 3. Add 200ml milk and mix well, 4. Sift in the flour and mix until smooth with no lumps, 5. Stir in the melted butter until the mixture resembles the image above. 6. Refrigerate the batter for 15 minutes.
Step 2 While the batter is chilling, whip the cream. Add sugar to the cream and whip until it forms patterns, but do not over-whip to avoid oil separation. Patterns should be visible.
Step 3 Remove the batter from the refrigerator and pour it into a non-heated, non-greased pan, spreading it evenly.
Step 4 Cook over the lowest heat, without flipping. After about half a minute, when the skin turns yellow, turn off the heat and lift the skin out promptly to avoid bubbles forming, which can affect the appearance.
Step 5 Place the cooked skin on a piece of plastic wrap, separating each layer to prevent sticking, and let it cool in the refrigerator (I dried mine, hehe).
Step 6 With the whipped cream and egg skin ready, you can start assembling the mille crepes.
Step 7 This recipe yields 11 layers of skin. Apply cream to each layer, and alternate with layers of durian, or a layer of durian followed by a layer of cream.
Step 8 After laying out 11 layers, cut the cake in half.
Step 9 Enjoy! The whole family will love it, and chilling it in the refrigerator enhances the flavor of the Durian Mille Crepes.
