Biscuit Recipe with Salted Egg Yolk

Ingredients for Biscuits: Salted Egg Yolk (Yolk Shortcrust) around 8, Butter (Yolk Shortcrust) 25g, Cake Flour (Yolk Shortcrust) 50g, All-Purpose Flour (Main Dough) 220g, Water (Main Dough) 50g, Butter (Main Dough) 75g, Baking Soda (Main Dough) 2g, Egg (Main Dough) 25g, Salt (Main Dough) 3g.
Method for Making Biscuits: Step 1, Spray the salted egg yolk with alcohol and bake at 180 degrees in an ACA oven for 5 minutes. Step 2, Mix in melted butter and then sift in cake flour. Step 3, After forming a dough, wrap in plastic wrap and let it rest for 1 hour. Step 4, Combine all ingredients for the main dough, adding water as needed, and wrap with plastic wrap to rest alongside the shortcrust.


Step 5, Roll out the main dough into a rectangle, place the yolk shortcrust in the middle, fold the ends towards the center to complete a three-fold. Step 6, Roll the dough into a rectangle again and repeat the previous step to complete another three-fold. If the dough becomes soft due to high room temperature, it can be refrigerated for a while before continuing. Step 7, After the second three-fold, roll out the dough to a thickness of about 4mm, cut into strips, and pierce holes.


Step 8, Brush a layer of egg wash on the surface. Step 9, Bake at 140 degrees in an ACA North American appliance oven for 25 minutes, then reduce to 100 degrees and bake for another 10 minutes. Adjust the temperature according to your oven’s characteristics and observe the coloring.
