Egg and Milk Bread Recipe with Vanilla Custard

Ingredients for Egg and Milk Bread: Vanilla Custard part: egg yolks 3, sugar 30g, cake flour 12g, cornstarch 8g, milk 250g, vanilla bean half. Main dough: high-gluten flour 200g, sugar 20g, yeast 3g, salt 2g, milk powder 10g, egg liquid 20g, milk 100g, butter 25g.
Method for making Egg and Milk Bread:


Step 1: Prepare the vanilla custard by mixing 3 egg yolks, 12g cake flour, and 8g cornstarch in a bowl until smooth; the mixture may be lumpy and thick depending on the size of the egg yolks.


Step 2: In a pot, place 250g milk and 30g granulated sugar.


Step 3: Split a half vanilla bean lengthwise and scrape out the seeds, adding both the seeds and the pod to the milk, then bring to a gentle boil.


Step 4: Slowly add the cooked milk to the egg yolk mixture, stirring well, then strain back into the pot. Cook over low heat until the custard thickens and remove from heat.


Step 5: Pour into a bowl, cover with plastic wrap, and set aside to cool.


Step 6: For the dough, in a mixing bowl, combine 200g high-gluten flour, 20g sugar, 3g yeast, 2g salt, 10g milk powder, 20g egg liquid, and 100g milk. Mix on low speed until combined, then beat on medium speed for 3-4 minutes.


Step 7: Add 25g softened butter and continue beating until the dough is smooth.


Step 8: Divide the dough into 6 portions, shape into rounds, cover with plastic wrap or a damp cloth, and let rise at room temperature for 30 minutes.


Step 9: After fermentation, place the dough with the sealed side up and roll into an elongated oval shape.


Step 10: Fill with custard and seal the edges, making sure they are tightly closed.


Step 11: Cover with plastic wrap or a damp cloth and let rise for another 40 minutes.


Step 12: In a non-stick pan without oil, preheat on the lowest heat, then place the fermented bread, cover with a lid, and simmer on low heat for 6-7 minutes. Flip and continue to cover and simmer for another 6-7 minutes, watching the color to avoid overcooking.
