Classic plain flavor! Ingredients: 6 eggs (each approx. 53-63g), 90g fine sugar, 30g salad oil, 30g milk, 80g low-gluten flour. Weigh 60g white sugar and set aside.
Separate the egg yolks and whites from 6 eggs. Insert the butterfly whisk. Add the egg whites to the main mixing bowl and whip for 3 minutes 30 seconds at speed 3.5, gradually adding 60g white sugar through the opening during the process.
Remove the butterfly whisk and transfer the whipped egg whites to a large bowl. Add the egg yolks to the main mixing bowl. Add 30g fine sugar to the main mixing bowl. Mix for 30 seconds at speed 4.
Add salad oil, milk, and low-gluten flour. Mix for 1 minute at speed 3. Add half of the whipped egg whites and gently fold with a spatula. Then add the remaining half and mix evenly with the spatula.
Pour the batter into 10 paper cups, filling each to about 60% capacity. Place in a preheated oven. Bake at 180°C for 25-30 minutes.
