Perfect Sponge Cake Recipe: Moist, Fluffy, and Delicate

This cake is denser than chiffon and softer than pound cake! It boasts a moist, fine texture that melts in your mouth, with an ideal golden ratio that ensures a slight springiness without dryness.
It retains the characteristic tender elasticity of a sponge cake, yet avoids the dryness often found in traditional recipes. When chilled, it develops a subtle texture reminiscent of light cheesecake.



Ingredients:


– 100g cake flour, sifted


– 50g milk


– 50g sunflower oil


– 5 eggs (approx. 53-63g each), chilled


– 260g egg liquid


– 100g fine sugar



Instructions:


1. Preheat the oven to 180°C.


2. Place a bowl on the main lid, weigh the cake flour in it, then remove and sift. Set aside.


3. Place another bowl on the main lid, weigh 50g milk and 50g sunflower oil in it. Remove, stir slightly, and set aside.


4. Insert the butterfly whisk. Pour 260g egg liquid into the main bowl and add 100g sugar. Cover with the measuring cup lid.


5. Whisk for 15 minutes at 40°C on speed 4.


6. Whisk again for 3 minutes on speed 4.


7. Add the sifted 100g cake flour around the butterfly whisk. Mix for 10 seconds on speed 2.


8. Add the milk-oil mixture around the butterfly whisk. Mix for 4 seconds on speed 3.


9. Remove the butterfly whisk. Carefully stir the batter with a spatula until no dry flour or lumps remain.


10. Pour the mixture into a prepared 8-inch (22cm diameter) removable cake pan.


11. Gently tap the pan on the counter a few times to release large air bubbles.


12. Place immediately in the oven. Bake at 180°C for about 30-35 minutes or until the surface turns golden brown.


13. Remove from the oven, unmold, and slice!
