Ingredients for Chocolate Cake

Flour: 120g
Cocoa Powder: 25g


Eggs: 3


Fine Granulated Sugar: 65g


Butter: 135g


Heavy Cream: 200ml


Canned Black Cherries: to taste


Chocolate Shavings: to taste


Ingredients:


Water – 75g


Rum – 1 tablespoon (approx. 15ml)


Baking powder – 4g


Baking soda – 1g



Instructions:


1. Prepare all the ingredients.


2. To make the chocolate cake, crack the eggs into a pot and add fine granulated sugar. Mix well with a whisk.


3. Sift the cake flour, cocoa powder, baking powder, and baking soda into the egg mixture.


4. Use a rubber spatula to mix into a smooth batter.


5. Cut the butter into small pieces and melt it over a double boiler. While the butter is still warm, pour it into the batter.


6. Continue folding until the butter and batter are evenly combined.



7. Pour one-third of the batter into the cake pan and smooth it with a spatula. Place the pan in the preheated oven at 190°C (374°F), using both upper and lower heat on the middle rack, and bake for about 10 minutes. Repeat the process with the remaining batter to bake three sheet cakes in total.



8. Rum Syrup: 65g fine sugar, 75g water, 1 tablespoon (15ml) rum. To make the rum syrup, mix water and fine sugar, heat until boiling to dissolve the sugar completely. Let the syrup cool, then add the rum.



9. Decoration Materials (6-inch): 200ml whipping cream, 30g fine sugar, canned black cherries, chocolate shavings.



10. Whip 200ml whipping cream with 30g fine sugar using an electric mixer until it reaches the consistency shown in the image.



11. Use a brush to apply rum syrup onto one cake layer.



12. Spread the whipped cream over the syrup-brushed cake layer with a spatula.


13. Drain the canned black cherries, cut them in half, and arrange them over the applied layer of whipped cream.



14. Spread another layer of whipped cream to completely cover the black cherries.



15. Place the second cake layer on top.



16. Repeat this process, finishing with the third cake layer. Brush the cake with rum syrup, then cover the top and sides completely with whipped cream.



17. Use a rubber spatula to apply chocolate shavings to the sides and top of the cake. Fit a piping bag with a tip, fill it with whipped cream, create decorative patterns, and top the cream with black cherries.
