Ingredients for Basque Cheesecake:
– Cream cheese: 350g


– Granulated sugar: 75g


– Heavy cream: 150g


– Eggs: 3


– Cornstarch: 10g


Method for Basque Cheesecake:


Step 1: Mix cream cheese and granulated sugar over hot water until smooth;


Step 2: Stir in room temperature heavy cream until well combined;


Step 3: Add room temperature eggs one at a time, mixing well after each addition;


Step 4: Preheat the oven to 230°C and sift the batter;


Step 5: Pour the batter into a greased baking mold;


Step 6: Place in the lower rack of the oven and bake for 21 minutes;


Step 7: Allow to cool, then seal and refrigerate overnight before serving.
