Step 5: Use CF-100A proofing box, set temperature to 28 degrees, humidity to 70%, time to 60 minutes, add water to the bottom tray for humidity, and let the dough proof until it doubles in size. Step 6: After proofing, divide the dough into 16 equal portions of about 60g each, degas and let rest for 20 minutes. Step 7: Shape the rested dough again, arrange in a square baking tray. Step 8: Set CF-100A proofing box to 35 degrees, 85% humidity, 60 minutes, add water to the bottom tray for humidity, and let the dough proof until it doubles in size.
Step 9: Remove the proofed dough, dust the surface with a thin layer of flour. Step 10: Preheat the COUSS electric oven CO-960M to upper heat 160 degrees, lower heat 200 degrees, place the baking tray on the middle rack and bake for about 20 minutes.
