Cartoon Bread Recipe

Ingredients for Cartoon Bread: High-gluten flour 500g, Whipping cream 140g, Yeast 5g, Egg white 75g, Milk powder 30g, Milk 180g, Butter 20g, Salt 6g, Granulated sugar 85g, Cocoa powder as needed.
Steps for making Cartoon Bread:


Step 1: Place milk, whipping cream, 15g sugar, and 35g egg white into the bread bucket.


Step 2: Add high-gluten flour and 3g yeast, knead for ten minutes, then add 10g butter and continue kneading for 20 minutes.


Step 3: Put the kneaded dough in the refrigerator for over 17 hours.


Step 4: Tear the refrigerated dough into small pieces and put it into the bread bucket, add 40g egg white, 70g sugar, salt, milk powder, and 2g yeast.


Step 5: Start the dough mixing program, if the dough is too wet, you can add a small amount of flour.


Step 6: After the dough is formed, add 10g butter and knead for about 40 minutes.


Step 7: Let the dough rest for 10 minutes.


Step 8: Divide the dough into 60g pieces and relax for 15 minutes.


Step 9: Use a small amount of dough mixed with a small amount of cocoa powder to make cocoa dough.


Step 10: Place 60g of dough on a baking tray and shape it, use cocoa dough for hats, eyes, and noses, and take a small amount of dough for ears and noses, let your imagination run wild.


Step 11: Put the shaped cartoon bread into the oven for a second fermentation (place a bowl of hot water inside the oven).


Step 12: Preheat the oven to 170 degrees, place on the second-to-last rack, and bake for about 15 minutes.


Cooking tips for Cartoon Bread: 1. Do not add all the milk at once, start with 80% of the milk quantity and adjust based on the flour’s water absorption. 2. If egg whites are not enough, you can add a small amount of egg yolk, it won’t affect much. 3. When mixing the dough, if the dough is too wet, as shown in the fifth picture, you can add a small amount of flour. 4. Baking time depends on the oven’s temperament.
