Method for making cocktail buns: Step 1: Dough ingredients Step 2: Combine flour, sugar, salt, milk, condensed milk, and yeast in a stand mixer. Step 3: Mix on low speed, reserving about 10% of the milk as the flour’s absorption rate varies. Step 4: Weigh the butter. Step 5: Mix on medium speed for 5 minutes. Step 6: After 5 minutes, when a rough membrane forms, add butter and continue mixing. Step 7: Mix on medium-high speed for 12 minutes until the dough is smooth and fine. Step 8: The dough should have a smooth hole when stretched into a thin film. Step 9: Remove and shape the dough, then place it in a mixing bowl for the first fermentation. Step 10: Cover with plastic wrap and let it rise for about 60 minutes until doubled in size. Step 11: After the first fermentation, press the dough and it should not spring back. Step 12: Remove from the bowl and degas. Step 13: Divide the dough into 8 equal portions, round them, and let them rest under plastic wrap for 20 minutes. Step 14: Roll out each portion into a long shape with a rolling pin. Step 15: Roll up from the top to the bottom. Step 16: Join the ends together to form a ring, similar to a bagel. Step 17: Place the shaped buns on paper liners for the second fermentation. Step 18: I use an oven for the second fermentation, placing a bowl of hot water on the bottom rack at 35 degrees Celsius for about 1 hour. Step 19: Prepare the sausages and other ingredients while the buns are rising. Step 20: After about 1 hour, the buns should have doubled in size. Step 21: Place the sausages on the buns, spread salad dressing, tomato sauce, and sprinkle with green onions. Step 22: Preheat the oven to 175 degrees Celsius and bake for 20 minutes, covering with aluminum foil halfway through. Note that oven temperatures may vary.
