Ingredients for Fancy Bread: High-gluten flour 240g, Low-gluten flour 60g, Butter 25g, Milk 150g, Yeast 6g, Granulated sugar 50g, Salt 3g, Egg 1, Cream frosting, Almond slices, White sesame seeds as needed.
Method for making Fancy Bread:
Step 1: Place the bread ingredients (milk, half an egg liquid, flour, salt, sugar, yeast) into the bread machine and mix for 30 minutes. Then add the softened butter and continue with the dough mixing and fermentation program for approximately 1 hour and 40 minutes. (The bread machine is truly a great tool; it used to be very laborious to knead by hand, but now everything can be entrusted to the bread machine, saving a lot of effort.)
Step 2: Divide the dough into portions of about 80 grams each, for flower bread, each small piece should be about 22 grams, this can be adjusted based on the size of the dough you are making. Then cover with plastic wrap and let it rest for ten minutes.
Step 3: Caterpillar Bread: Roll the dough into an oval shape, then roll it up directly, leaving a small piece at the end, divide it into several thin lines, and wrap them around the bread roll to form the shape.
Step 4: Place the prepared bread dough in the oven and set it to 38 degrees Celsius for fermentation for 40 minutes, remember to place a dish of warm water in the oven.
Step 5: When the dough has doubled in size, brush it with egg wash and sprinkle with sesame seeds and almond slices. (Make sure to mix some water into the egg wash.)
Step 6: Put the bread dough with egg wash into the oven and bake at 180 degrees Celsius for 25 minutes. At the 20-minute mark, take it out and brush with egg wash again for a better color. (If using a convection oven, adjust the temperature slightly lower by about 10 degrees Celsius and bake for 30 minutes.)
Step 7: When the bread is slightly cool, cut a deep slit in the middle without cutting through, then pipe cream frosting inside, and a delicious cream-filled bread is completed.
Step 8: Caterpillar bread is also good, soft and delicious.
