How to Make Cartoon Bread with Detailed Steps

Ingredients for Cartoon Bread (Grey Skin Part): High-gluten flour: 260g, Milk: 120g, Milk powder: 10g, Egg: 1, Granulated sugar: 50g, Salt: 3g, Yeast: 3g, Butter: 30g, Charcoal powder: 1g. (White Skin Part, also known as Ok-skin or Snow White Skin): High-gluten flour: 60g, Cake flour: 40g, Water: 60g, Baking powder: 1g, Butter: 10g.
Method of Making Cartoon Bread: Step 1: Pour all ingredients for the grey skin part, except butter, into the Hauswirt M5 Silent Kitchen Aid, mix on second gear until a dough forms, then refrigerate for more than 30 minutes (not exceeding 12 hours) to cool the dough and reduce kneading time, especially suitable for summer.


Step 2: After half an hour, take out the dough, add softened butter, and mix on second gear until the butter is fully incorporated into the gluten.


Step 3: Switch to fourth gear and mix at high speed until the dough reaches the fully expanded stage.


Step 4: Round the dough, cover with plastic wrap, and ferment at room temperature for 1 hour.


Step 5: While the dough is fermenting, mix the ingredients for the white skin part, form a dough, and refrigerate for half an hour.


Step 6: When the grey dough has doubled in size, take it out.


Step 7: Gently press to release the air and relax, divide into 9 equal parts, 8 for the body, and 1 further divided into 16 small dough pieces for the ears; I didn’t take a group photo for this step!


Step 8: Take out the white dough from the refrigerator, relax for ten minutes without fermentation; divide into 10 equal parts, 8 for rolling round, flatten, cover the belly, 1/2 for rolling into long strips and cutting into small eyes, 1.5 parts add matcha powder, knead into green dough for leaves.


Step 9: Combine the small parts together.


Step 10: After completing all, cover with plastic wrap, ferment at room temperature for 40-60 minutes in summer, until the dough is about 1.5 times larger.


Step 11: Preheat the oven, place the baking tray in the middle layer, bake at 170 degrees for 20 minutes! Add foil at 10 minutes.


Step 12: After the bread cools, draw Totoro’s facial features with dark chocolate!


Step 13: Out come the lively little Totoros!
