Ingredients and Making Method of Lemon Cookies

Ingredients of Lemon Cookies
– 65 grams of Anchor butter
– 100 grams of cake flour
– 40 grams of white sugar
– 5 grams of lemon
– 3 grams of lemon zest
– 1 gram of salt

Steps to Make Lemon Cookies
Step 1: Wash the lemon thoroughly and grate it into fine threads with a grater. Try not to grate the white pith as it will taste bitter.

Step 2: Prepare the Anchor butter.


Step 3: Soften the Anchor butter at room temperature and put it into a large bowl.


Step 4: Add white sugar. Using powdered sugar will make it more delicate; white sugar gives a more granular texture. Mix well by pressing.


Step 5: Pour in lemon juice in small portions multiple times, and mix well each time.


Step 6: Sift in the cake flour.


Step 7: Add the lemon zest and start to press and mix.


Step 8: Press and mix until the cookie dough has no dry powder and forms a ball.


Step 9: Shape it into a square with plastic wrap and put it in the freezer for about 1 hour to set.


Step 10: Take out the set cookie dough and cut it into pieces about 1 cm thick.


Step 11: Preheat the oven to 175 degrees Celsius for about 20 minutes. Decide the baking time and temperature according to the color of the surface.


Step 12: Let it cool completely after baking. Then you can enjoy the crispy lemon cookies!
