Ingredients for Fried Bread
225 grams of high-gluten flour
225 grams of low-gluten flour
50 grams of sugar
135 grams of water
2 eggs
5 grams of yeast
50 grams of milk powder
50 grams of corn oil
Steps to Make Fried Bread
Step 1: Put all ingredients except corn oil into a chef machine and stir.
Step 2: After the dough forms a ball, add corn oil and continue to stir until well combined.
Step 3: Stir at speed 3.
Step 4: The dough can form a film.
Step 5: Knead well, cover with plastic wrap and ferment at room temperature for 45 minutes.
Step 6: Poke a hole in the dough. If it doesn’t retract, it’s ready.
Step 7: Degas the dough and divide it into 16 parts. Let it stand for 15 minutes.
Step 8: Knead the dough into balls and place them on a baking sheet for secondary fermentation.
Step 9: Let the dough ferment for about 40 minutes during the secondary fermentation.
Step 10: Pour corn oil into a pot and bring to a boil. Test the oil temperature with a chopstick. When many small bubbles stick to the chopstick, you can put the dough in.
Step 11: Don’t put too much dough at once. Fry 2 – 3 pieces over low heat.
Step 12: Flip the dough when it turns yellow. Take it out when both sides are golden brown.
Step 13: Place the fried bread on a baking sheet.
Step 14: Dust with powdered sugar.
