Original Dough
– Butter: 40g

– Whole Egg Liquid: 13g
– Cake Flour: 75g

– Butter: 40g

– Matcha Powder: 5g

Making Steps of Matcha Nine-square Grid Cookies
1. Prepare and weigh all the ingredients. You can weigh the cake flour for the original dough after making the matcha dough.
2. Soften the butter and beat it at low speed with an electric mixer.


3. Add icing sugar.


4. Beat the egg first, then add it to the butter in 4 times and beat at medium speed with an electric mixer. After each addition of egg liquid, wait until it is completely mixed before adding the next time, until all the egg liquid is added.


5. This is the state after the butter and egg liquid are fully beaten.


6. Sift in the cake flour and matcha powder. Stir evenly with chopsticks first, then knead the dough into shape by hand. After making the matcha dough, make the original dough in the same way.


7. These are the two kneaded doughs.


8. To easily shape the dough into a 2-cm square, I used a cookie shaping mold. The measured size is exactly 4 cm. So after refrigerating the dough for half an hour, just cut it in half. If you don’t have a mold, you can also use a plastic spatula to help shape it into a rectangle.


9. I put all 4 doughs into the mold and refrigerated them for half an hour.


10. Next is the splicing work. Take the dough out of the refrigerator, cut it in half first, then shape it into a 2-cm long strip. You need 5 matcha strips and 4 original strips to splice a perfect nine-square grid.


11. This is the dough I spliced. Because I didn’t calculate the length correctly, I could only cut out 13 complete matcha nine-square grids.


12. I shaped the extra dough into matcha marble cookies, which are also great! The method is to roll the two kinds of dough into long strips respectively, then twist the two strips like a rope, and fold it 3 times. In this way, the marble pattern will be more beautiful.


13. Put the two shaped doughs into the freezer for half an hour, then take them out and slice. The recommended thickness of the cookies is 2 – 3 mm. If it’s too thick, it’s not easy to bake through. If it’s too thin, it will burn. Try to keep the thickness consistent when cutting…


14. I still feel there are some small flaws. Some single squares have slanted edges and are not square enough.


15. Preheat the oven to 180 degrees first, then bake in the middle layer at 170 degrees for about 13 minutes. You can adjust the temperature according to your own oven. Mainly, when the edges of the original cookies are slightly colored, it’s okay!
