Ingredients of Mixed Wheat Aroma Bread:
– 210 g of high-gluten flour
– 90 g of whole wheat flour
– 20 g of white sugar
– 5 g of salt
– 5 g of dry yeast
– 86 g of levain
– 215 g of water
– 25 g of butter
– An appropriate amount of corn kernels
– An appropriate amount of sausage or luncheon meat
– An appropriate amount of cashews
Making Steps of Mixed Wheat Aroma Bread:
1. Prepare the ingredients.
2. Dice the sausage or luncheon meat.
3. Add corn kernels and cashews, stir well and set aside.
4. Add 210 g of high-gluten flour to the mixing bowl.
5. Add 90 g of whole wheat flour.
6. Add 20 g of white sugar and 5 g of salt.
7. Mix the flours.
8. Add 86 g of levain and 5 g of dry yeast.
9. Add 215 g of water.
10. Use a stand mixer to stir at a slow speed first and then at a fast speed until the thick film stage (the dough is basically smooth and the torn edge shows a jagged shape).
11. Add 25 g of butter and stir until the fully developed stage (the dough is very smooth and the torn edge is smooth).
12. Add the prepared ingredients and stir until well combined.
13. Ferment at room temperature for one hour.
14. Divide the dough into two equal parts.
15. Gently press to release large air bubbles.
16. Put it into a toast pan.
17. Repeat the same operation for the other dough.
18. Let it rise in the oven at 34°C for 40 minutes for the second fermentation.
19. Make three diagonal cuts on the surface.
20. Bake at 200°C for 18 minutes, top and bottom heat.
