Ingredients for Mango Mousse Cake: Mango flesh 400g, Milk 70g, Milk 15g, White sugar 40g, Whipped cream 300g, Oreo biscuits 150g, Butter 60g, Gelatin sheets 4 sheets, Hot water 60g.
Method for making Mango Mousse Cake: Step 1: I bought the biscuits from the supermarket, removed the cream, and crushed them with a rolling pin.
Step 2: Melt the butter in the microwave or over water, pour it into the crushed biscuits, mix well, place in the cake mold, press firmly, and refrigerate.
Step 3: Blend 400g of mango with approximately 350g of milk into a puree.
Step 4: Soak three gelatin sheets in cold water until soft.
Step 5: Pour the remaining milk and sugar into a saucepan, dissolve over low heat, then remove from heat and stir in the gelatin sheets until dissolved.
Step 6: Pour 300g of mango puree into the saucepan and mix well, remembering to reserve about 50g of mango puree for later use.
Step 7: Whip the cream until it is not too stiff, just whipped, then pour it into the mango mixture and stir well.
Step 8: Remove the cake mold from the refrigerator, pour in half of the mango mixture, add the last 50g of diced mango, continue pouring until the mixture is complete, tap a few times to remove air bubbles, and refrigerate for 2 hours.
Step 9: Soften the last gelatin sheet in 60g of hot water and mix well with the remaining 50g of mango puree.
Step 10: After 2 hours, remove the cake mold, pour in the mango gel, and refrigerate overnight.
Step 11: I used a hairdryer to warm the mold for a while, which allowed me to release it from the mold; if the edges are a bit soft, place it back in the refrigerator to set the shape.
Step 12: I cut this without setting the shape and removed a piece of the cookie mango mousse cake.
Cooking tips for the cake: The biscuits must be crushed very finely, ideally into a powder, then pour in the melted butter. If it still seems dry, add a bit more butter. The absorbency of biscuits varies, so once everything is well mixed, it’s ready. My biscuits were not crushed too finely.
