Chiffon cake, also known as Chiffon Cake, is distinguished by its exceptionally soft and airy texture, resembling a sponge cake with a cotton-like feel. Its key characteristics include a light and fluffy body, a moist interior, and a tendency to crack on the surface. This is attributed to the high protein content of the egg whites, which are whipped to a stiff peak before being folded into the batter. The key to making a chiffon cake lies in the whipping of the egg whites and the mixing technique. The egg whites must be beaten until they are firm and glossy, forming stiff peaks, yet avoid over-beating. The mixing should be done quickly and evenly with a folding motion to prevent deflating the batter. The baking temperature is also critical; it must be low-temperature and slow-baking to ensure the cake is thoroughly cooked without burning the surface. The ideal oven temperature typically ranges from 150°C to 170°C. Chiffon cakes are often paired with various ingredients, such as fruit puree, chocolate, tea powder, and coffee, allowing for numerous flavor variations. They are also commonly layered with whipped cream, mousse, or other fillings. Due to its delicate texture, a chiffon cake is usually served at room temperature and should not be refrigerated for extended periods, as this can cause it to dry out.
